These are far from traditional pancakes. Chock-full of health/vitality-boosting nutrients rather than empty carbs, they will keep you full and energized for hours. I would never try to act like these taste as divine as fluffy, white pancakes slathered in butter and syrup, however they are a great healthy alternative. And may I please digress for a second and say, look how freaking awesome the view is from my living room!! Not to mention hidden behind those trees is a running/biking trail and a huge building with ice rinks (helloooo hockey!) and [lap] swimming pools. I love Colorado. And my apartment.

This is just a little something I whipped up as a snack...no frills or anything. All measurements are approximate. I had some leftover garbanzo beans and lentils from salads I ate recently, and knew lentils were good in hummus, so why not?! I wanted to add an extra creamy texture and a good source of fat to use in place of olive oil so that's where the avocado came in. This recipe would also be good with some cilantro mixed in, I didn't have any on hand unfortunately.
That's all, just thought I'd share this simple and delish creation :) I am a horrible person. I have neglected this blog for over a week (!!) and yet I have gotten the most views ever in my absence (!!!). I promise I have wanted to post something...but I've had a few attempts that fell short recently... #1: Scarlett Orzo with Shaved Asparagus Salad --Orzo didn't fly with this recipe...I'm going to try it again with quinoa #2: Kale Salad with Lemon Tahini Dressing -- Didn't have all the veg I wanted to reeeally make it blog-worthy, but a good lunch nonetheless! #3: No-Bake Chocolate Torte -- According to my mom "not chocolatey enough"; and because I broke the news that it had avocado, everyone could taste it. Lame. I want to remake it and take that flavor down a notch, while enhancing the chocolate. Are you all interested in any of these? Is it worth putting them on here or should I move on? In the mean time..here's a sweet treat I've had up my sleeve for a while now. These chews can serve as a fantastic, filling snack or a nice sweet but light ending to a summer day : ) The realm of raw food dieting is way beyond my reach. I could never go without real baking or meals heated above 120F (or whatevs the limit is) on a cold winter day. During summer however, when a hot kitchen is less than desirable, raw food is perfect. Seee I'm not opposed to the concept, I just don't have the willpower! These raw blondies are a perfect example of an easy, raw summer treat.
The ingredients list is minimal and the preparations are super simple. And the flaaaavors...cashews provide a buttery taste and the combination of salty and sweet is divine. These also make great filling snacks that will give you long lasting energy. Try them out! I'm not a huge chocolate fan, but when I do crave it, you can bet I'll be making these cookies! They have just the right amount of chocolate and an irresistable chewy texture. Plusss, these gems are gluten free!
I have a confession to make. If I could only read one food blog for the rest of my life...it would be Oh She Glows. Angela is so personable, has an effortless way with words, and a gift for baking (and cooking!). I think I have made more vegan recipes from her blog than any other blogs combined. I guess I can add this to my list! What food blog would you choose if you could only read one? Annnd lastly, make sure you vote in the poll to the right, I'll be putting up a new one in a couple days! Thanks : ) Ohhhh baby. This is a good introduction to macrobiotics if I've ever had one. (At least I think its macro...fact check anyone?)
I'd like to believe Alicia Silverstone would be proud. I am by no means ready to go macro...but this makes me optimistic. This is a meal that should please any palate that likes asian cuisine (especially sushi). Why you ask? Because the main ingredients is seaweed! I seriously can't get over how good this is dearies...and healthy. Anyone impressed with my presentation skills? No? Okay then, moving on... ; ) |
